just a tribute: to my first frittata

When John received a cast iron, oven-safe pan for his birthday last June I could not be more excited. The first thing that popped in my head was frittata! I have been wanting to make one for awhile but never had the correct hardware to do so.....until now. After researching and pinning many recipes I finally decided on a zucchini, basil and goat cheese frittata. Not to toot my own horn, but I made an amazing choice. I found the recipe on Lydia's wonderful blog The Perfect Pantry.

So here it goes....

Zucchini, Basil and Goat Cheese Frittata:

Ingredients

1 medium zucchini
Cooking spray
2 tsp olive oil
1 small onion, diced {I used a white onion}
6 large eggs
1/2 cup soft goat cheese
2 tsp milk {I used 2% because that is all John drinks, but feel free to make it healthier and get skim}
1/4 cup roughly chopped fresh basil leaves
2 tsp fresh thyme leaves {Didn't have this so left it out of the recipe}
1/4 tsp kosher salt
1/4 tsp fresh black pepper
1/4 cup grated Parmigiano-Reggiano cheese, or more to taste {the more the merrier :) }

First, grate the zucchini on a box grater using the largest hole side. Then put in a colander for about 20 minutes to dry just a little. Lydia suggested taking a wooden spoon and pressing gently on the zucchini to get rid of any loose and/or excess liquid. (They don't have to be perfectly dry by any means).

Next, make sure to preheat your broiler :)

Then, place onions and grated zucchini in an oven safe frying pan on low until the onions are semi translucent and is just barely cooked.

In a bowl, whisk the goat cheese, eggs and milk until fairly mixed. Then add the basil, thyme (or in my case, just the basil), salt, and pepper.

Next add the egg mixture to the onion and zucchini mixture. Cover the pan and sautee on low for about 3-4 minutes. After that time, take a rubber spatula and lift the edges of the frittata allowing for the uncooked egg to run underneath. Put the lid back on for another 3-5 minutes until it is almost cooked but still a little runny on top.

take the pan off the heat and sprinkle Parmigiano-Reggiano cheese on top.

Place pan in broiler for about 1-2 minutes or until cheese mixture has melted.
(someone was being a little impatient)

Let cool for a few minutes and ENJOY!!!

What a weekend breakfast!

just a tribute: to weddings

I felt like this was an appropriate topic considering my older sister gets married in a little over a week (insert excited scream here)! I am now going to turn that excited scream into a nervous laughter. Why you ask? Because I have to give a Maid of Honor Speech and I may or may not have written it yet. Did I also mention I HATE public speaking? Also, as a person who tends to cry when they are overly happy about something, I am afraid I am going to be one of those Maid of Honors who sobs through their entire toast. I keep telling myself to calm the nerves because this day isn't about whether or not I make a great toast, it's about Katie and Andy starting a life together as a married couple.

But enough about me (even though this is MY blog), more about the soon to be married couple! I could not be more happy for my sister, she has finally found someone who completes her, who makes her a better person, and who knows that she is ALWAYS right. I am also so excited to gain a new brother, Andy is one of the most patient and understanding people I know, not to mention he also laughs at my jokes (he must have a great sense of humor).
.....wait a second did I just start writing my toast?

Let the countdown until the big day commence!

just a tribute: to outdoor summer concerts

The ideal outdoor summer concert venue of choice for me is definitely WolfTrap! If any of you DC/NoVA folks have not been, I highly recommend it. Why do you ask? Cause you can bring in your own booze! At the risk of sounding like an alcoholic, let me also mention that you can bring in a whole picnic of different foods as well! But, it is so refreshing to be able to enjoy a concert without spending $8 for one beer or small glass of wine. John and I have had the pleasure of seeing the 3 wonderful concerts this summer:

Colbie Caillat and Gavin DeGraw

A staple at any summer concert is always 1,2 or on occasion maybe 3 bottles of wine (depending on how many people are going, of course), a large assortment of cheeses, and a delicious entree! Colbie and Gavin put on an amazing concert! My favorite song performed was Gavin DeGraw's new single "Sweeter"!

Hot Chelle Rae and Demi Lovato

We took Shannon to go see Hot Chelle Rae and Demi Lovato as a gift for finishing up Elementary School. That's right the baby of the Kelliher Squad is entering middle school (pause for tears). Lucky for us, John went early to get us good seats, and in doing so I don't think he has ever felt more uncomfortable in his life waiting in line with a mass crowd of tweens. Here is my current favorite Demi Lovato song (don't judge, I got to keep up with the little sis)!

Jackson Browne

The last WolfTrap concert we went to, and potentially for the rest of the summer :(, was Jackson Browne. John and I bought tickets for my Dad's birthday, but I kind of feel like I bought myself a present I enjoyed the concert so much. It was the perfect weeknight concert and I would go again in a heartbeat. One of my favorite songs performed that night was "These Days". I am neither confirming nor denying whether or not I shed a tear during the performance...

What concerts have you gone to this summer?

just a tribute: to a diy mirror

Wow time flies! Didn't I just write a post yesterday? I guess not.

Regardless of when my last post was, I am excited to share my latest project with you! I had been shopping around for awhile for a mirror to go over our kitchen table. Why do I need a mirror above there, you ask? Because I need to get a last look at myself going out the door!

So, I found this fabulous white patterned mirror at Home Goods for a great price. It looked like it had been run over or stepped on a few times with the amount of scuffs it had on it (hence the cheap price), but I thought to myself how the proportions would look great! I put it my cart and purchased it, then went straight to a craft store and bought some beautiful turquoise spray paint!

It's hard to see the scuffs, but trust me they are there! We also had to tape off the mirror so we wouldn't get any paint on it.

This is after 3 coats!

The final product! It adds a pop of color in our fairly neutral apartment!

With a few more homey touches added (a beige textured table runner and some turquoise candles) I would say the end result turned out well! John however thinks it looks too "Beachy", so I obviously responded by saying he should get me a beach house to put it in!

Happy Friday Everyone!

just a tribute: to greek quinoa salad

The Greek salad combination of cucumbers, olives, tomatoes, feta and other toppings has been a favorite of mine since I can remember. Which is why I was so tickled when I came across this delicious recipe for Greek Quinoa Salad on the blog two peas & their pod. Why hadn't I thought about mixing these lovely flavors with the protein-packed healthy grain that is quinoa?

After bringing this great summertime dish to two events over Memorial Day weekend, it's safe to say that it will have to be a BBQ staple the rest of the season. The recipe below serves six people however, bringing it to big parties I doubled it and there was plenty to go around!

Chopped up olives, onions, tomatoes, cucumbers

Cooking the Quinoa

Greek Quinoa Salad:

Yields: serves 6

Ingredients:

2 cups water
1 cup quinoa
Pinch of salt
1 cup grape tomatoes, halved
1 cup chopped cucumber
1/3 cup pitted kalamata olives, halved
1/4 cup diced red onion
1/3 cup feta cheese
Salt and freshly ground black pepper, to taste

To make the dressing:
1/4 cup olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano

Directions:

1. Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let cool quinoa cool to room temperature.
2. In a large bowl, combine quinoa, tomatoes, cucumber, kalamata olives, red onion, and feta cheese.
3. To make the dressing, whisk together olive oil, red wine vinegar, and oregano in a small bowl. Pour dressing over the salad and stir until mixed well. Season with salt and pepper, to taste.

I wish a final picture to show you but John and I were so excited about trying the dish that it must have slipped my mind! Take a look at some finalized dish pictures at two peas & their pod and thanks again for introducing me to this amazing recipe!

just a tribute: to guilty pleasures

I am embarrassed to share this, but I LOVE the song "Call me, maybe" by Carly Rae Jepsen. I currently blame it on having a 12 year old sister, we will see how long I can use her as an excuse.

I will need my siblings to start having kids soon so when my 12 year old sister grows up I will have a reason to watch Disney movies. Until then I guess I will be a good sister and keep treating her to go see movies like Brave (it looks so good)!

Hope everyone has an amazing holiday weekend full of friends, family and my favorite....food!

just a tribute: to a facelift

I know what you are all thinking, I am too young and beautiful to get a face lift. Well, you are right, I am too young and definitely too beautiful. Therefore, it's a good thing I'm not getting one! This post is a tribute to my blog getting a much needed face lift!

After a strange 2 month hibernation I am ready to crawl out of my cave and start posting again! I would love to hear your thoughts on things you would like to hear about!

So stay tuned to hear more about my crazy life....

just a tribute: to bad bloggers

I'm not going to lie, I have been a pretty poor excuse of a blogger lately (key word "pretty"). I have had the craziest schedule from traveling for work, to planning a bachelorette party, to preparing for a vacation, to catching up on all my reality tv shows! But all excuses aside, I will do my best to continue blogging it up! I would love any and all input on what have been your favorite posts and what you would like to see more of!

In the mean time I have to share my most recent find:

You all know about my obsession with Kettle Corn...well this lite Kettle Corn from Trader Joes only fuels the fire!

just a tribute: to the dc car show

I recently went to the Washington DC car show with my family and had a blast! We have been going to this auto show for years and it never disappoints. Here are a few snapshots from the day:

The sad thing about this picture is that my brother actually owns a pager.

This is one of my favorite pictures of the day. I think it is safe to say John and I can never own a Fiat or any other small car for that matter.

This is the car that convinced John to come to the car show. It is dream to one day own a lambo....I can support that :)

just a tribute: to a well balanced breakfast

I used to be one of those people who never made time for breakfast in the morning. I have now realized how important it is to jump-start your metabolism. Lately I have been going through a real oatmeal phase. Usually I just have plain oatmeal and add a little Splenda to sweeten it up, however I have recently been adding some fresh berries to the mix and have fallen in love! I cant wait until berries are actually in season and a little more affordable :)

This mornings breakfast!

As many of you may know about me, I am not a big coffee drinker. I like the occasional coffee on the weekend, but otherwise I am a dedicated tea drinker. Every season my choice of tea changes and right now I am all about Tazo branded Chai tea! I highly recommend you all give it a go!

I drink mine with a little splenda and a splash of milk!

just a tribute: to my valentine

Roses are red,
Violets are blue
I've eaten too much chocolate,
How about you?

A special shoutout to my Valentine, thanks for making this day so special!

John and I bought this beautiful painting as a gift to eachother, it has added some much needed color into our family room!

just a tribute: to ikat

Recently I have been obsessing over ikat print. I have found a few pillows, home furnishings, and even clothing in this pattern that I absolutely love! The pattern can be all different colors and make great accents to any room!

Here are some great ways to incorporate the ikat pattern:

just a tribute: to my emotional twin

I am excited to say I have found my emotional doppelganger! Just like me, Kristen Bell cries just as much when she is happy as when she is sad. Her reaction below reminds me a little bit of my reaction with my sisters engagement announcement. I'm surprised John didn't record any of my emotional meltdown!

Enjoy!

just a tribute: to katie and andy

When I first found out that my older sister Katie was engaged, I nearly had a heart attack. I must have experienced every emotion possible in a 30 minute time span, and boy was it exhausting. I went from angry to ecstatic, from ecstatic to sobbing, and from sobbing to laughing. Why was anger my first emotion experienced? I was convinced John had known about this and didn't tell me, however he and Andy confirmed that John was the same as me....out of the loop. I was then totally elated, jumping up and down and screaming like a little girl (living in an apartment, I'm sure all my neighbors were thrilled about this)! Then came the tears (and the one that confused John the most) and I don't know how to put this without me sounding completely lame, but I just wish I was with them to give them a hug. Finally, I started laughing. I laughed because I was happy, but most of all because I was embarrassed at my actions.

So cheers to my sister and new brother, Katie and Andy!!!

p.s. below are their engagement photos taken by yours truly!

just a tribute: to my january birch box

For those of you who don't know what a Birch Box is, it is a website where you pay a monthly subscription and have four to five hand-picked deluxe samples sent to your house. You can also fill out a beauty profile to have products picked and sent specifically for you!

I recently got my first Birch Box in the mail and have so far loved everything I have tried!

Here is what my January Birch Box looked like:

I was so excited when I got it in the mail! It is like reliving Christmas morning once a month!

I haven't tried my all- natural mini LaraBar yet, however I think they would be great to stash in my purse for those times I need to quench my hunger or satisfy my sweet tooth!

Even though I am 24 I have started to invest in some expensive anti-aging eye creams, which is why it was so nice to have this little surprise in my box waiting for me! This VMH Hypoallergenic Re-Everything Eye Serum is great because it works triple time to get rid of those puffy eyes, dark circles and wrinkles!

To be honest this is probably the item I liked the least in my January Birch Box. However, in all fairness, I haven't really given it a good try because the sample they gave me happens to be in a bright and fluorescent Barbie pink!

I am excited to try this out, I just haven't had the chance because of my beautiful shellac nails that have held up so nicely :) But, I am excited about the beautiful taupe grey color that Zoya Feel Collection has provided!

I'm not a huge perfume wearer, I usually just stick to the daily use of deodorant to keep me fresh. However I find this Juicy Couture fragrance to be just the right amount of fruity and feminine and will be a great wear for any big events!

just a tribute: to shellac nail polish

I recently went and got my nails done for the first time in awhile and after hearing rave reviews, decided to see if the $30.00 it costs for shellac is worth it. Three and a half weeks later I can tell you that it is worth every penny! I have never had a manicure done without the polish chipping at least 2 days later, let alone last 3 1/2 weeks.  Another reason shellac is worth every penny is because there is no drying time, yes, I repeat no drying time! They dry them as you go, so at the end of your appointment when it is time to pay, put on your coat, and dig through your purse for your keys, your nails wont get messed up! When trying to convince my mom that shellac nail polish really lasts, she proceeded to tell me I must not do enough dishes....typical mom response! Needless to say that I will definitely be going back to get them done again sooner rather then later.

Here are some of my favorite winter colors to try:

just a tribute: to new york

As I mentioned in a previous post, Skedouche sweaters were featured on The Jimmy Fallon Show. The best thing about this was that John and I were able to score two VIP tickets to the show! We went for 2 nights and stayed at The Standard where we had AMAZING view of the city!

We also managed to eat somewhere nice without a reservation (granted it was about the 5th restaurant we had walked into). On another high note, we discovered a new bottle of wine we both love... Cono Sur!

The next morning we woke up, had a delicious Starbucks brew and breakfast and headed over to ground zero. I was astonished by the progress they have made on the development of Freedom tower and then John reminded me that 9/11 did happen over 10 years ago (Isn't it crazy how much time has gone by).

Having worked up an appetite from all the walking around we took a cab to Katz's Deli. This is the main thing John wanted to do the whole trip. He had watched a show about the deli on the travel channel and their famous Pastrami sandwiches. He was very pleased with his decision to visit it!

I have to admit, I was a little hesitant to try it,but it was like butter melting in your mouth. I have never tasted meat so tender before in my life!

Finally it was time to head off the The Jimmy Fallon Show! He put on a great show with special guest Seth Meyers and also gave everyone in the audience special edition PS3's!

We couldn't take any pictures in the studio, so this will have to do!

After the show we walked around 30 Rock and Times Square. It is such an amazing place during the holiday season!

just a tribute: to nashville

Because I was so busy over the past few months I haven't had the opportunity to share any of my recent travels with you! First up on my list..... Nashville!

When my good friend Regina moved out to Nashville there was no question in my mind that I would be taking a girls trip out there to visit her! Luckily for me, Chelsea and Savino had the same idea as me.

The trip started out a little rough when our flight was delayed, making it so we wouldn't arrive into Nashville until about 1:00AM. Thankfully for Savino's dad and his frequent travel miles, he was able to book us a room free of charge (what a gentleman)! The next morning (While Savino was sleeping), Chelsea and I got up to meet Regina and take her to work for the day so we could use her car to go explore the "Music City"! First stop was the famous Pancake Pantry, where we enjoyed an amazing breakfast (but unfortunately didn't spot any celebs)!

Next stop on the list was The Country Music Hall of Fame! I have to admit I enjoy my country music, but I am definitely not as big as an enthusiast as Chelsea and Kristen who were in heaven at this spot! Upon arriving to the museum Chelsea HAD to get a picture with the sign, can you even spot her?

The rest of the day was also a huge success, we managed to all get a nice pair of authentic cowboy boots (which by the way might be the most comfortable pair of shoes I own) and have a nice dinner out. We ended the evening drinking wine and watching quality movies such as Step Up 3. The biggest surprise of the night was the I was the last one up. Anyone who knows me, knows that I can fall asleep at the drop of a hat. Therefore I considered this night a personal victory :)

The next day was also one for the books! We had a delicious brunch, cooked by Clay, rounded out with delicious mimosas. Then went to Franklin, a small town right outside of Nashville that has amazing boutiques and restaurants. After a delicious oyster meal we went to our hotel in downtown Nashville to get ready for a night of debacle!

Let me just say that Nashville definitely held up to all my expectations and then some! If any of you have not had the chance to go, I would definitely recommend it!

just a tribute: to skedouche

I'M BAAACCKKK!!!

I apologize for my absence but in the span of two months I have been to New York City, Nashville, North Carolina, and Scottsdale. I have also been working 60-70 hour work weeks in between those trips in order to help out Skedouche and unfortunately I have had to put this blog on the back burner. But as I stated above...I'm Back!

Next, I would like to take this moment to congratulate my boyfriend John on all of Skedouche's successes in 2011 season!

Here are just a few:

Congratulations John and Skedouche on a amazing 2011 season!
